Homemade Extra Virgin Olive Oil Mayonnaise Recipe

Ingredients

2 whole eggs, room temperature (or only the yolks, if preferred)
1 tablespoon Dijon mustard
1 teaspoon vinegar
1 tablespoon fresh lemon juice
1 small garlic clove
1/2 teaspoon sea salt
1 1/2 cups extra virgin olive oil

Instructions

Make sure the eggs are fully at room temperature before starting. Cold eggs can prevent the mayonnaise from emulsifying properly and may keep it from thickening.

Add the eggs, Dijon mustard, vinegar, lemon juice, garlic, and sea salt to a blender or immersion blender cup.

Begin blending on low speed.

Slowly drizzle in the extra virgin olive oil while continuing to

blend until thick, smooth, and emulsified. Taste and adjust salt, vinegar, or lemon juice if needed.

Refrigerate for 20–30 minutes before using. Store refrigerated in an airtight container for up to 1 week.

1 cup homemade olive oil mayonnaise
1/2 cup buttermilk
1 tablespoon fresh lemon juice
1/2 teaspoon fresh lemon zest
1 tablespoon chopped fresh parsley

Sea salt, to taste
Freshly cracked black pepper

Instructions

Whisk together the mayonnaise and buttermilk until smooth.

Add the lemon juice, lemon zest, herbs, sea salt, and black pepper. Stir until fully incorporated.
